Pretty simple dish cooked up with some really fresh marlin from Sam's Club. This is very light and delicious meal perfect for a summer evening. Entire family loved the fish and pasta.
SAUTE GARLIC AND SHALLOTS. DEGLAZE WITH WHITE WINE. ADD BUTTER, CAPERS AND LEMON JUICE |
MARLIN WITH SALT, PEPPER AND GARLIC POWDER |
PLACE FISH IN FLOUR, EGG WASH AND BREAD CRUMBS |
SAUTE FISH IN SAUCE UNTIL JUST COOKED THROUGH. DON'T OVERCOOK. WILL RUIN THE FISH |
MARLIN COOKS IN JUST A FEW MINUTES. ADDED FRESH THYME AT THE END. |
SERVED WITH LINGUINE THAT IS COVERED IN PAN SAUCE |
